corned beef and rice

there's just something about corned beef and rice for breakfast. mmmm.... it's so filipino, but hey, that's who i am =) i had brought a can of corned beef from CA (thinking that we may not find any here easily, but we found that good ole Costco sells it) and peter bought tomatoes the other day ($3/lb!!! we need to get us a tomato plant and grow our own!) and i added garlic and onion too. stick that on top of freshly cooked rice - oh! - yummy in the tummy =) i guess our enjoyment of this meal would make more sense if i said that we hadn't had rice for more than 2 weeks now. with me studying and peter learning linux (computer stuff) on his own, we've been into the quick-fix meals for the most part, you know, spaghetti and mac 'n cheese and egg and toast and sandwiches and salads, and whatever we can cook on the foreman grill. so this morning was a treat. i guess i haven't blogged much either cuz i've been trying to do more quality studying. speaking of which, i'm going to go and do so now.
